Cacao beans are dried, fermented and heated at a low temperature. By heating the bean, the fatty part separates from the rest.

Cocoa
Harvested the same way as cacao but heated at a high temperature, the final product is much sweeter than cacao.
- Sweet tasting
- Better for baking
- More processed, decreasing antioxidants and nutrients
